For this project select some type of real world quality failure. You may use a current job situation, or find a quality score or review that states the problem. Restaurant or travel reviews can be found at www.tripadvisor.com , yelp, etc. or many product ratings can be found in Consumer Reports buyers guides. You may also use a combination of product tests/reviews. 
Your task is to:
-Identify the failure, or lack of quality. 
-Find out what processes, design, or systems lead to the failure or lack of quality. 
-How can the issue be averted?
-What changes need to be implemented in order to change quality issues?
The better projects are ones that either you see in your workplace, or at least ones that you get some actual input and feedback from the people doing the job, and perhaps even work with them to find a solution.
